Passionate about food since childhood, Alex Bordeville has spent his life cooking, curating, and exploring flavors. Trained at the Culinary Institute of America in New York, he learned under exceptional mentors who inspired not only his craft in the kitchen but also his commitment to mentoring others.

After years honing his techniques at a beloved local restaurant, Alex now leads the kitchen at CAPO, perfecting and celebrating his love for Italian cuisine. Guided by a belief in simplicity and the beauty of seasonal, local ingredients, his philosophy translates directly to the plate. Known for turning challenges into moments of culinary magic, he keeps CAPO’s heart beating and guests returning for more.

When he’s not in the kitchen, Alex enjoys a well-made Old Fashioned and exploring Vancouver’s Michelin-recommended venues, constantly seeking new inspiration to bring back to his team and his cuisine.

Raised in Vancouver, Bobby Ewing’s hospitality journey began in the heart of Yaletown at a friend’s pub and restaurant, where he started as a dishwasher. He spent his early years weaving between the back and front of house before finding his stride in the front, where his talent for leadership and building an accountable, people-first culture truly flourished.

Across every chapter of his career — from independent venues to overseeing numerous locations for a corporate giant — Bobby has championed the belief that taking care of your team translates directly into exceptional guest experiences. His approach has shaped service cultures that leave lasting impressions from the first hello to the final goodbye.

When he’s off the clock, you’ll find Bobby enjoying a fine bottle of Super Tuscan, spending time with his family, or exploring Vancouver’s vibrant scene — from dining and events to everything in between.

ASSISTANT GENERAL MANAGER

Alannah Taylor has been stirring, shaking, and shaping the hospitality scene since 2011—and she feels she's just getting started. What began as a love affair with the bar turned into a full-blown career, blending creativity and leadership with a deep love for guest experience. Since joining CAPO in 2020, she’s climbed from bartender to Bar Manager and now Assistant General Manager, all while keeping her fingerprints on every part of the operation.

Yes, she still runs the cocktail program (and yes, her drinks have been featured in Forbes and other publications), but Alannah does a lot more than craft killer cocktails. She’s behind the scenes fine-tuning operations, elevating service standards, and mentoring future hospitality stars—basically making sure everything runs as smoothly as her favorite shaken martini.

She credits CAPO for much of her professional growth, and when she’s not working, you’ll likely find her sipping wine with a loaded charcuterie board, or hiking and camping with her bear like dog.

Born in Bologna, Italy, Federico brings his unmistakable Italian accent and larger-than-life personality to every corner of CAPO. A career server by trade, he quickly became the most talked-about presence on the floor — earning more guest praise and glowing reviews than anyone in CAPO’s history.

Now as Maître d’ and Sommelier, Federico has turned his passion for wine into a mission, growing our list from forty bottles to over two hundred carefully curated selections. Beyond his own service, he’s dedicated to mentoring the team — sharing his charm, nuances, and deep hospitality instincts to empower others to reach their full potential. His enthusiasm is infectious — you can sense it from across the room. Whether you’re here for a quick bite or a full-scale dining experience that ends with a visit from the amaro cart, Federico ensures every moment feels special, personal, and unmistakably CAPO.
